A Cevicheria is a meeting point for Peruvians to enjoy the best produce the coast has to offer. Alejandro Saravia takes you on the ultimate ceviche experience where you’ll discover the freshness and diversity of Peruvian coastal cuisine. It will reveal how ceviche dishes have changed through time, starting with traditional Peruvian ceviche, moving to Japanese-influenced ceviche, and ending with Alejandro’s take on how ceviche will evolve in the future. The Ceviche Experience is paired with wine.

Chef Alejandro has designed a Peruvian tour through food. A culinary experience that will show you different techniques, influences and approaches of Peruvian cuisine. Starting from the MAR (ocean) with ceviches, raw and cured; moving through the ’VALLES’ (valleys) serving seasonal vegetables with a Peruvian twist; arriving in the ‘GRANJAS’ (paddocks) plating up high-end beef, lamb, and chicken, and ends with DULCE (desserts), sweet treats inspired by traditional Peruvian dessert dishes – all made in house. The Uma Experience is paired with wine.
