Alejandro Saravia

Alejandro is known for bringing Peruvian cuisine to Australia. Both as a Peruvian and a chef, Alejandro has a passion for combining the best produce from Australia with the traditional cuisine of his home country. Alejandro has opened Morena in Sydney and critically acclaimed Pastuso in Melbourne - and now brings his wealth of knowledge to Western Australia.

Born in Peru, Alejandro went from Peruvian culinary school at 16, to cooking in some of the world’s top restaurants, including The Fat Duck in London under Heston Blumenthal. In 2007, a year after he arrived in Sydney, Alejandro founded A Taste of Peru where he shared his knowledge of Peruvian food through degustations, cooking classes and gourmet tours.

Xerxes Bodhanwala

Head Chef Xeres Bodhanwala received his diploma in culinary arts and restaurant management at Le Cordon Bleu in Sydney. Xerxes’ career has taken him to Firefly Tapas and Wine Bar, Meat and Wine Company, Firefly Lodge, Club Med, Ribs and Rumps and chef Alejandro Saravia’s restaurant Morena in Sydney.

He has also worked in India, running Red Fork Deli in Indiranagar, Bengaluru. With a shared love of Peruvian food, local produce and stunning seafood, it seemed only natural that Xerxes would head up the kitchen at Uma Restaurant.

Jeremy Burt

Jeremy heads up one of the largest food and beverage operations in Western Australia at Pan Pacific Perth.

Originally from New Zealand and now a proud West Australian, Jeremy joined the team with a fantastic background that incorporated some of the leading names on the Australian and international restaurant scene including The Ivy, Rockpool, Bathers Pavillion, Guilliame and Ku De Ta. Jeremy’s passion is putting our guests first.

Helen Clarke

Helen Clarke

Helen has over 14 years of experience in hospitality, including Ceviche in London and Bushman’s Restaurant in Dubai. Helen’s years travelling about the world took her to places like Peru where she tried local cuisine and learned about different flavours and ingredients. As restaurant manager at Uma Restaurant, Helen brings her enthusiasm for dining and the flavours of Peru to the front of house team and guests at Uma Restaurant.
